Description

Bake your own traditional German Christmas Stollen with Werner's Weihnachtsstollen Backmischung sächsischer Art, a convenient baking mix inspired by the celebrated Stollen tradition of Saxony, Germany. Made with wheat flour, almonds, yeast and aromatic spices, this mix takes much of the measuring and preparation out of making a festive homemade Stollen.

Christmas Stollen is one of Germany's most beloved holiday specialties. This rich, yeast-raised Christmas bread is traditionally filled with dried fruit and candied citrus peel, then brushed with melted butter and generously dusted with powdered sugar. The result is a fragrant, buttery holiday treat that pairs beautifully with afternoon coffee or tea.

With Werner's baking mix, you can make your own approximately 2.2 lb (1 kg) Christmas Stollen, customizing it with raisins, rum-soaked fruit, candied citron or other favorite ingredients. It is a wonderful holiday baking activity and a thoughtful homemade gift for friends and family.

  • Just add butter, milk, raisins and candied citron

  • Ideal for Advent baking, holiday entertaining and homemade gifts

What You Need to Add

For one Christmas Stollen:

  • 250 g (8.8 oz) butter, divided into 200 g for the dough and 50 g for brushing

  • 125 ml (about ½ cup) milk

  • 100 g (3.5 oz) candied citron (Zitronat)

  • 175 g (6.2 oz) raisins, optionally soaked in rum

  • Granulated sugar and powdered sugar for finishing

Baking Instructions

  1. Prepare the dough: Empty the 440 g baking mix into a large bowl. Add 200 g softened butter and 125 ml lukewarm milk. Knead thoroughly by hand for approximately 10 minutes.

  2. Add the fruit: Gently incorporate the drained raisins and candied citron. Cover the dough and let it rise in a warm place for at least 60 minutes.

  3. Shape and rest: Form the dough into a traditional oval Stollen loaf and place it on a parchment-lined baking sheet. Cover and let rest for another 30 minutes.

  4. Preheat the oven: Heat to 356°F (180°C) using conventional top-and-bottom heat, or 302°F (150°C) for convection. The manufacturer recommends conventional baking.

  5. Bake: Loosely cover the Stollen with aluminum foil and bake for 45 minutes. Remove the foil and continue baking for another 25–35 minutes, until the loaf is suitably browned and baked through.

  6. Finish: While still warm, brush the Stollen all over with the remaining 50 g melted butter and sprinkle with granulated sugar. Allow to cool, then dust generously with powdered sugar.

  7. Store: Wrap the cooled Stollen in parchment or aluminum foil and keep in a cool, dry place.

Baking Tip: For a traditional holiday flavor, soak the raisins in rum before adding them to the dough. Drain thoroughly before use.

Alternative Recipe: Saxon Stollen Sheet Cake

Prepare the Stollen dough according to the instructions and let it rise for 60 minutes. Roll it out onto a parchment-lined baking sheet, make small indentations, sprinkle lightly with sugar and distribute small pieces of butter over the surface.

Bake at 356°F (180°C) conventional or 302°F (150°C) convection for approximately 20 minutes. Finish with a cinnamon-sugar mixture, if desired.
