This smoked and dried beef top round originated in the the mountains of Switzerland and has become a sought-after delicacy throughout Germany. Cured based on the original Swiss method, each pure beef cut is seasoned with a proprietary spice blend, then air-dried and repeatedly pressed until the meat is ready and the deep red color is perfect.
Great on it’s own, and very complimentary to alpine cheeses, a charcuterie board, whole grain breads or crisp breads.. Pair with a dry Riesling, Dornfelder, or Gruener Veltliner.
