Bündnerfleisch is a smoked and dried beef top round, originating the mountains of Switzerland. This charcuterie has become a sought-after delicacy among gourmets throughout the world. Based on the original Swiss method, the Schaller & Weber B[ndnerfleisch is made from the finest beef meat cuts, seasoned with a proprietary spice blend, then air-dried and repeatedly pressed until the meat is ready and the deep red color is perfect.
Great on it’s own, and very complimentary to alpine cheeses, a charcuterie board, whole grain breads or crisp breads.. Pair with a dry Riesling, Dornfelder, or Gruener Veltliner.
