This dry-cured, cold-smoked Lachsschinken is pure pork loin and one of the very few of its kind made in the United States matching traditional German standards.

Once the cut has been cured and smoked, it is rolled in a hand-picked, thin layer of fat to keep in the moisture. As the Lachsschinken ages, the pork develops a flavor similar to smoked salmon. Chill this unique meat and slice it thin, like lox for bagels, and serve with cream cheese, onions and capers.

Available as a 2-pound half cut. Made by Schaller & Weber, a New York butcher and fine food purveyor with German roots.

Please note: All sausage products from Schaller & Weber are received frozen and stored in that state until shipment to customers. According to the Schaller & Weber website, the product date code indicates the sell-by or freeze-by date. Frozen products maintain their quality and safety for 2 to 3 months after the sell-by dates.
