Pearl sugar is the type of granulated sugar that resembles small pearls. It's known for retaining its shape and not melting easily during baking, making it ideal for adding texture and a sweet, caramelized flavor to baked goods. 

There are two types of pearl sugar: the Nordic type, typically smaller in size and used for topping various baked goods, waffles and pancakes; and the Belgian type, which is larger and denser and used for cakes.
