"Handkaese" is a German regional sour milk cheese, a culinary specialty from the Harz Mountain to Frankfurt region (state of Hesse), Named after the way it is made, "by hand." The Hand Cheese - or Harzer Cheese - has a distinct smell, slightly sour tastes and semi-hard texture. Delicious with apple cider or young white wine. Often served with caraway.

The real deal!
OMG, I am in 7th heaven! I am from Frankfurt and have missed "Handkaese mit Musik" ever since I've moved here. I have tried many, many times to make this cheese myself, and always failed miserably! This is the first time I have found it in the US, and it is worth every penny! DELICIOUS!!
